Erica's Egg White Breakfast Cups

Ingredients:

  • Liquid egg whites
  • 1 red pepper (diced)
  • 6 slices of turkey bacon (cooked; chopped)
  • Low-fat shredded cheese
  • Spinach (handful; chopped)
  • Cayenne (pinch for spice; optional)
  • Salt/Pepper
  • Can also add any other veggies or spices (green peppers, onions, etc.)

Directions:

  1. Pre-heat oven to 400°F
  2. Grease muffin tin or silicone muffin cups
  3. Fill each muffin tine 3/4 full with liquid egg whites
  4. Add diced red pepper, turkey bacon, cheese, and spinach (or other optional ingredients)
  5. Add cayenne, salt, and pepper to taste (optional)
  6. Bake for 15-20 minutes or until eggs are set and cooked through

*Makes 12 servings
