Erica's Egg White Breakfast Cups

Ingredients:
- Liquid egg whites
- 1 red pepper (diced)
- 6 slices of turkey bacon (cooked; chopped)
- Low-fat shredded cheese
- Spinach (handful; chopped)
- Cayenne (pinch for spice; optional)
- Salt/Pepper
- Can also add any other veggies or spices (green peppers, onions, etc.)
Directions:
- Pre-heat oven to 400°F
- Grease muffin tin or silicone muffin cups
- Fill each muffin tine 3/4 full with liquid egg whites
- Add diced red pepper, turkey bacon, cheese, and spinach (or other optional ingredients)
- Add cayenne, salt, and pepper to taste (optional)
- Bake for 15-20 minutes or until eggs are set and cooked through
*Makes 12 servings
