Iceberg Lettuce ... Is it Worthy or Not?

Iceberg lettuce has long been considered void of nutrition; an otherwise useless food confined to a vessel for salad dressing.  In reality, iceberg lettuce is a versatile, affordable food deserving some credit.

Iceberg is an excellent source of potassium, manganese, vitamins A, K, and C!  It’s also a good source of thiamin, vitamin B6, folate, iron, calcium, magnesium, and phosphorous.  Iceberg’s diverse nutrient profile supports a multitude of benefits from healthy bones to a strong immune system, and it may even help reduce the risk of certain cancers, heart disease and stroke.  Further, it’s extremely low calorie containing only 20 calories for two cups making it a great food for your waistline.

Take iceberg beyond salad with these tips:

*Build a better burger, wrap, gyro, or taco with iceberg leaves for a low carb and low calorie alternative.

*Celebrate with a fun, interactive salad skewer by layering bite size iceberg wedges and cherry tomatoes together.

*Bulk up slaws, pastas, stir fries, and noodle bowls with crisp shredded iceberg.
