A frozen granola bar?  That’s right!  Summer is the perfect time for a refreshing treat, and what better way to cool off than with seasonal berries bursting with antioxidants!

This chilled out version includes a creamy protein-rich base and crunchy whole grain granola making it ideal post-workout, or as a dessert you can feel good about.

Ingredients (yields 8 servings)

4 scoops V-Core Vanilla Bean Whey Protein
32 ounces non-fat vanilla Greek yogurt
4 cups of berries of your choice (strawberries-raspberries-blackberries) fresh or frozen
2 cups low-fat granola

Preparation:

Place granola on the bottom of an 8 by 8 inch pan.
In a blender combine protein, yogurt, and berries in batches until smooth.
Pour over granola mixture and place in the freezer for 45-60 minutes or until almost frozen.
Using a knife, gently indent the top layer into 8 servings.
Place pan back in freezer until ready to eat.
Remove pan and let sit at room temperature for 10-15 minutes before cutting through granola layer to remove bars.
