Barbeque season is in full swing and nothing screams summer like watermelon! Watermelon is 92% water, making it a hydrating, low calorie treat. One cup contains about 20% of your daily needs of Vitamin A and C to support a healthy immune system and supple skin. In addition, one cup provides 170 milligrams of bloat-banishing potassium, and a whopping dose of the antioxidant lycopene which may protect against diseases such as cancer, Macular Degeneration, and cardiovascular disease. Juicy Watermelon Salad
Salad Ingredients:
2 cups peeled, diced cucumber
2 cups diced jicama
2 cups diced watermelon
1 cup blueberries
¼ cup chopped cilantro, basil or mint
1 jalapeno pepper, seeded & diced (optional)
¼ cup crushed peanuts or sunflower seeds
Dressing Ingredients:
2 Tbsp fresh lime juice (about 2 limes)
¼ cup grapeseed oil
1 clove garlic, minced
Salt & pepper to taste
Preparation:
Toss all ingredients together with dressing right before enjoying.
