Tahini is made from sesame seeds and is rich in heart-healthy fats and protein. It’s easy to make in bulk and to portion for the week. Mediterranean Quinoa Power Bowl with Tahini Dressing
Yield: 4 Servings
1 lb. fresh broccoli florets
1 Tbsp. Extra Virgin Olive Oil
Kosher salt & pepper to taste
1 c. halved cherry tomatoes
1 avocado, sliced
1 cucumber, peeled & sliced
½ c. toasted slivered almonds
3 c. cooked quinoa
½ c. Tahini
Juice of 2 lemons (1/4 cup)
1 c. fresh basil
- Preheat oven to 425°F. Toss broccoli with olive oil, salt and pepper.
- Place broccoli on a baking sheet and roast for 20-25 minutes or until fork tender and golden brown.
- Combine Tahini, lemon juice, and basil in a blender and pulse until smooth.
- Portion quinoa and vegetables among 4 bowls and top with Tahini dressing.
